Ideas For Diabetic DessertsEveryone at Smith Mountain Lake has a friend or loved one who is diabetic and must eat accordingly. For some, that kind of diet can be challenging as it is more difficult to find foods you enjoy that are safe to eat. That is especially true of finding desserts that don’t raise your blood sugar. Here are some refreshing ideas for diabetics who are looking for variety in their dessert foods.

Baked Apple Yogurt Treat

                2 lbs. apples cored and sliced
1/2 cup stevia powder or blue agave
1/2 teaspoon  ground cinnamon
2 tablespoons  fresh lemon juice
6 cups plain yogurt
  • Lay apple pieces in a 3-quart  slow cooker. Combine stevia and cinnamon. Sprinkle over apples and drizzle with lemon juice.
  • Cover and cook on low for 6 or 7  hours.
  • To serve, spoon hot apples into 6 dessert dishes. Top each with a scoop of yogurt. Lightly sprinkle with nutmeg and serve.

             

Blackberry Crisp

              2 cups cleaned fresh blackberries
1 teaspoon grated orange peel
2 packets stevia
1 teaspoon honey
1 teaspoon cinnamon
3 tablespoons whole wheat pastry flour
2 tablespoons rolled oats
2 tablespoons Earth Balance Non-dairy butter
  • Preheat the oven to 425°F and coat small baking dishes with Earth Balance.
  • Combine the berries and orange peel. Divide between the 4 baking dishes.
  • Combine the remaining ingredients to make a crumble topping. Sprinkle on top of the fruit.
  • Bake until crisp and the fruit is done about 15 minutes. Serve warm.
